Grilled Watermelon Ingredients
- 1 medium watermelon
- Zest of 1 lime
- 1/4 cup lime juice (about 2-3 limes)
- 1 tablespoon olive oil
- 2 tablespoons honey
- 1 teaspoon cayenne pepper
- 1/4 teaspoon Kosher salt, medium coarse
- 1/4 cup fresh mint, diced
Lime-Mint Yogurt Sauce Ingredients (Optional)
- 1/2 cup plain yogurt
- 2 tablespoons lime juice (about 1 lime)
- 2 tablespoons fresh mint, chopped
Slice watermelon into 3/4-inch thick wedges, keeping the rind on.
Whisk together lime zest, lime juice, olive oil, honey, and cayenne pepper.
If making yogurt sauce, in a separate bowl, whisk yogurt with 2 tablespoons lime and 2 tablespoons mint in a separate bowl and, Set aside both mixtures.
Heat outdoor or stovetop grill to high. When grill is hot, brush each side of watermelon slices with lime-honey mixture and grill until you see grill marks, about 1-2 minutes, then flip and grill another minute.
Remove watermelon from grill, sprinkle with salt and mint leaves. Repeat until all watermelon is done or grill watermelon as needed. If using, serve yogurt sauce on the side.
