Cool and a bit spicy, these summertime popsicles are hydrating for those hot days when you want something frozen to feel refreshed.
- 1/2 cantaloupe, seeds and pulp removed, chopped
- 1/2 cup coconut milk
- 1/2 lime, juiced
- 1 /2 tablespoon ginger, fresh grated
- 1/4 teaspoon ginger, ground
Place cantaloupe, coconut milk, and lime juice in a blender. Add both the grated and ground ginger and blend until smooth and creamy.
Taste and add more lime juice if desired.
Pour mixture into popsicle molds. Freeze until firm, about 4 hours.
