If you never thought about grilling your fruit it’s time to start. When fruit is placed on the grill it caramelizes and its flavor intensifies. The recipe calls for apricots but they can easily be swapped out for another seasonal fruit such as peaches. Serve with creamy Greek yogurt and mashed berries and you have an incredibly simple (and healthy!) dessert or even breakfast.
Serves 2
- 1/3 cup blueberries
- 1/3 cup blackberries
- Sugar and lemon juice, to taste
- 4 apricots, halved and pitted
- ½ teaspoon vegetable oil
- ½ teaspoon honey
- Plain Greek yogurt, for serving
- Chopped almonds, optional
Sprinkle the berries lightly with sugar and lemon juice. Toss and set aside.
Toss the apricots with the oil and honey. On a preheated grill (or stovetop grill pan) over direct medium-high heat, grill the apricots on one side only (cut-sides down) for 3 to 4 minutes, until dark grill marks appear and the apricots soften.
Mash the berries lightly. Serve the grilled apricots with dollops of whole milk Greek yogurt and the berry mash. Sprinkle with chopped almonds, if desired.
